Getting coffee from the plant into your body involves a lot of biology and chemistry. The coffee plant uses the process of photosynthesis to convert water and carbon dioxide into sugars that it stores up in the seeds (a.k.a. the bean). Once roasted, the sugars in those seeds - beans - begins to continuously break down and carbon dioxide begins to leave the beans. This is known as degassing. What's important is to let the beans degas, but to let as little oxygen as possible penetrate the beans. The more oxygen gets into the beans, the faster they stale, and of course that leads to coffee going into the trash.
To help slow the staling process while facilitating the degassing process, we offer these pouches with one-way valves and zip-lock seals. Essentially they let the carbon dioxide flow out of the beans, but keep the oxygen away as well in hopes of keeping your roasted coffee fresh for longer than if you just let the oxygen have it's way with those precious beans.
We have two sizes, one that will fit up to 8 ounces of roasted coffee and one that will fit up to 1 pound. There's usually plenty of room even if taking the roast to the darker levels when the beans lose a lot of moisture and get pretty big.
The bags we currently carry are clear on one side and black on the other, with the valve on the black side so as to not obstruct your view of those beautiful beans.
